Spoil your loved one this Valentine’s day, with this romantic Lava Cake recipe for two, made in our very own Pres Les Pressure Cooker.

Servings: 2 (You can make double the recipe to serve 4, but only cook 1 or 2 at a time in the Pressure Cooker)
Ingredients:
- ½ cup dark chocolate chips
- 57g butter (plus more for greasing the ramekin)
- ½ cup icing sugar
- 2 large eggs
- 2 tablespoons cake flour
- 1 tablespoon cocoa powder
- ½ teaspoon vanilla paste/ 1 teaspoon vanilla essence

- Grease 2 metal ramekins heavily with butter, and line the bottom with baking paper that’s been cut to the correct size of the ramekin’s base. Do not skip this step, or you will not be able to remove the Lava Cakes from the ramekin.
- In a big glass/ metal bowl, combine the chocolate chips and butter. Heat some water in a small saucepan and when it comes to the boil, turn the heat down to low. Place the bowl on top of the saucepan and allow the hot water to melt the chocolate and butter completely. Stir gently to combine as they melt. Make certain not to get any steam or water into the mixture, as it will seize the chocolate.
- Add the icing sugar and stir until combined. It will become very thick and difficult to stir, don’t panic, just continue until mixed.
- Add the 2 eggs and stir until thoroughly mixed.
- Add the vanilla, flour and cocoa powder and stir until completely combined.
- Add 1 cup of cold water to the Pressure Cooker and carefully place the ramekins, uncovered, inside. Put the lid on the Pressure Cooker and set to the High-Pressure setting.
- Turn the heat to high until the Pressure Cooker reaches pressure (when the red safety pin rises) then turn the heat down to low and cook for 15 minutes for soft lava centres. If you prefer less lava, then cook them longer.
- When done, manually release pressure and open Pressure Cooker lid. Carefully remove the ramekins from the Cooker, using tongs.
- Use a dry dish cloth to hold the hot ramekin as you place a plate, upside-down, on top of it. Then flip both the plate and the lava cake, leaving the lava cake upside down on the plate. Still holding the ramekin with a dishtowel, carefully slide the ramekin off the cake without breaking it. If it breaks and the lava oozes out, next time try greasing the ramekin more, ensure you had baking paper inside, or try cooking for longer.
- Serve immediately, with fresh berries and sweetened whipped cream or ice cream.
